With two sides: one coarse and one fine for best results when sharpening.
Should be stored in water. Use wet, first with the coarse side until the desired cutting angle is obtained then with the fine side to remove any abrasions and leaving the blade really sharp.
Grinding:
This removes material until the required sharpening angle is achieved. Change from the grinding side only when a ridge appears. However, the blade is only truly sharp after honing or finishing.
Honing: Completed with fine side or stone. The process removes any scratches or other tracing from the coarse stone and produces a smooth surface.
